Supervisor A - Dietary (Corrections)

Position Summary

This position will supervise the daily activities of employees engaged in the food service area.

Pay Grade: 51

Salary Commensurate with Experience and Education

Minimum Qualifications

• Three (3) years of experience working in a lead/ supervisory capacity in a high-volume institutional food services organization and a bachelor's degree from an accredited college or university in culinary arts; OR
• Five (5) years of experience working in a lead/supervisory capacity in a high-volume institutional food services organization and an associate's degree from an accredited college or university in culinary arts; OR
• An equivalent combination of related education and/or experience.
• Experience working in a hospital, military, large organization or school environment is preferred.
• PROOF OF EDUCATION, TRAINING AND/OR EXPERIENCE IS REQUIRED.

Duties and Responsibilities

• Monitors cooking and serving well-balanced meals in a clean, safe environment by preparing and following menus approved by the Shelby County Health Department Dietitians.
• Directs the work activities of all assigned employees in the food services section and is accountable for results, determines resource needs and allocation of resources and accounts for their effective use.
• Directs and review the work of subordinate food service employees and inmate workers.
• Coordinates work operations related to food preparation, sanitation and food delivery.
• Directs employees and inmate workers to ensure efficient and economical operations.
• Recommends selections, status changes, disciplinary actions and terminations of inmate workers.
• Trains employees and inmate workers in food preparation and kitchen sanitation.
• Solves problems related to the work supervised.
• Determines material, equipment and food supplies need in daily operation.
• Leads employee staff and inmate workers in food preparation and sanitation duties.
• Perform other related duties as required or directed.

KSAs

• Ability to develop timetables, manpower, projections and ability to monitor and revise as needed to meet deadlines.
• Knowledge of food service practices and techniques.
• Knowledge and/or skill required in a high-volume food service operation.
• Managerial/leadership abilities.
• Ability to coordinate and direct the activities of assigned personnel.
• Ability to communicate and work with other departments.
• Knowledge of MS Office, Word and Excel.

Special Requirements

• Must be able to function in a prison environment.
• Will be required to pass a physical a drug test and a TB screening.
• Must be willing to work all shifts, weekends and be on call.
