The role is responsible for supervising the stewarding team, maintaining high standards of cleanliness and hygiene, ensuring proper handling of kitchen equipment and utensils, and supporting the smooth operation of the hotel’s Food & Beverage outlets and kitchen areas.\nKey Responsibilities:\nSupervise and coordinate the daily activities of the Stewarding team.\n\nAssign duties and work schedules to stewards according to operational requirements.\n\nEnsure all kitchen utensils, equipment, dishes, glassware, and cutlery are properly cleaned and sanitized.\n\nMonitor the cleanliness and hygiene of kitchens, back-of-house areas, storage areas, and equipment.\n\nEnsure proper handling, storage, and maintenance of kitchen equipment and utensils.\n\nMonitor the use and availability of cleaning chemicals, supplies, and equipment.\n\nEnsure all cleaning chemicals are properly labeled, stored, and used according to safety procedures.\n\nConduct regular inspections of kitchen and stewarding areas to ensure cleanliness and hygiene standards are maintained.\n\nCoordinate with the Kitchen, Food & Beverage, Engineering, and other departments to support daily operations.\n\nEnsure proper waste segregation, disposal, and recycling procedures are followed.\n\nMonitor inventory levels of stewarding supplies and report shortages to the relevant department.\n\nAssist with receiving, storing, and organizing operating supplies when required.\n\nTrain, guide, and supervise stewarding staff to maintain service and hygiene standards.\n\nEnsure compliance with hotel policies, HACCP, health and safety regulations, and sanitation standards.\n\nHandle operational issues and report maintenance or equipment problems to Engineering.\n\nPrepare or assist with daily reports, checklists, and departmental records.\n\nEnsure the Stewarding Department operates efficiently during busy periods and special events.\n\nPerform other duties assigned by the Executive Chef, Chief Steward, or Food & Beverage Management.\n\n Previous experience in Stewarding or Kitchen Operations, preferably in a hotel or restaurant environment.\n\nPrevious supervisory experience is preferred.\n\nGood knowledge of kitchen hygiene, sanitation, and cleaning procedures.\n\nKnowledge of HACCP and food safety standards is an advantage.\n\nStrong leadership, communication, and organizational skills.\n\nPhysically fit and able to work in a fast-paced environment.\n\nAble to work under pressure and manage a team effectively.\n\nDetail-oriented, responsible, and disciplined.\n\nWilling to work shifts, weekends, and public holidays.\n\n Diversity & Inclusion for Accor means welcoming each and everyone and respecting their differences by giving priority only to qualities and skills in extending employment and development opportunities.
