• To ensure that all responsible service of alcohol procedures is practiced at all times
• Trains and monitors Food & Beverage Team and ensures service standards are met
• Manages all Team Members in all aspects of the daily operation of the outlet, providing the necessary assistance where required
• Ensure Team Members have strong product knowledge of all wine styles on the outlet wine list
• Ensures that approved service sequences and standards are established and maintained at all times
• Ensures that all opening and closing procedures are carried out to an acceptable standard and supervises outlet
• Maintains efficient operating procedures for the outlet’s point of sale cashiering computer system, ensuring accuracy and balancing of till and the department cash float
• Maintains a high level of cleanliness and care of all equipment and materials; and ensure security of outlet
• Have an understanding of all licensing and operating legislation which affects the department including the Liquor Act.
• Promptly reports any maintenance work required to the maintenance department
• Maintains all outlet stock levels
• Perform monthly stocktakes on all beverage stock and complete timely reporting of stocktake findings
• Develops training plans and conducts on and off the job training sessions for all outlet Team Members
• Attends all scheduled food and beverage and other relevant meetings when required
• Monitors outlets manpower, payroll budget, control costs and maximise profitability
• Take extreme care with personal grooming in order to maintain a consistently high level of professional appearance and monitors service personnel’s appearance and grooming
• Other duties as may be prescribed from time to time due to operational needs

• Proven experience of incremental responsibility within a hotel environment.
• Proven experience in similar position within a hotel environment advantageous
• Experience supervising, training and motivating staff
• Experience creating rosters and adhering to wage control

• Proven ability to act independently on all matters relating to team and guest safety and wellbeing in the absence of senior management
• Well presented with an eye for detail and strong organisational skills
• Calm and professional demeanour in all instances, confident in conflict resolution and complaint handling
• Excellent time management and communication skills including rapport building between internal and external stakeholders
• Excellent computer system skills
• Confident interpreting and generating reports as well as reviewing daily occupancies to ensure smooth operations
• Strong focus and passion for hotel operations
• Demonstrated ability to coach, mentor, develop and inspire teams
• Time management skills with the ability to multitask
• Strong personal integrity
• Good interpersonal skills with ability to communicate with all levels of team members
