This is a hands-on leadership position, requiring a proactive individual who leads by example, supports their team and takes pride in maintaining exceptional back-of-house standards.\nKey Responsibilities\nLead, supervise and support the kitchen porter team, remaining actively involved in daily operations.\nCoordinate daily duties, rotas and staffing requirements to ensure smooth kitchen operations.\nMaintain exceptional standards of cleanliness, hygiene and organisation throughout all kitchen and back-of-house areas.\nOversee cleaning schedules, deep-cleaning programmes, waste management and deliveries.\nEnsure full compliance with HACCP, food safety, health and safety and COSHH procedures.\nMonitor cleaning supplies, chemicals and equipment, ensuring effective stock control.\nTrain, motivate and develop team members, promoting teamwork, professionalism and accountability.\nWork closely with the Back of House Manager, Executive Chef and wider culinary team to support operational excellence.\nThe Ideal Candidate\nPrevious experience as a Head Porter, Senior Kitchen Porter or Kitchen Steward, ideally within a luxury hotel or high-volume culinary environment.\nStrong leadership, organisational and communication skills.\nA hands-on approach with a positive attitude and excellent work ethic.\nGood knowledge of HACCP, food safety and health and safety standards.\nAbility to motivate a team and maintain high standards in a busy environment.\nFlexible and reliable, with availability to work weekends and public holidays.\nWhat we offer\nCompetitive salary based on experience\nPension scheme\nOngoing training and career development opportunities\nFree Leisure Centre Access (T&C's Apply)\nEmployee Discount Rates across Dromoland Resort\nAccess to Hotel Employee Rate programmes worldwide\nStaff events, social outings, and team activities\nWhy Join Dromoland Castle?\nThis is an exciting opportunity to become part of a landmark transformation and contribute to the next chapter of culinary excellence at Dromoland Castle.
