The opportunityQT Canberra is looking for an Executive Sous Chef to work alongside our Executive Chef as second-in-command, leading the day-to-day running of our kitchen. You'll keep culinary standards high across breakfast, dinner, the bar and in-room dining, mentor and grow a talented brigade, and help drive the food and labour results that keep QT ahead.\nKey responsibilities\nWork closely with the Executive Chef to lead the day-to-day running of the kitchen across breakfast, dinner, bar and in-room dining\nApprove all food leaving the kitchen, ensuring standard recipes and production specifications are followed\nEnsure every section and team member is rostered, prepped and ready for service\nPartner with the Food & Beverage Manager and outlet supervisors for smooth service across all outlets\nManage food and labour costs to budget through smart ordering, par levels, stock rotation and waste reduction\nCheck the quality and accuracy of daily deliveries\nMaintain the highest food safety, hygiene and WH&S standards\nRecruit, train, coach and supervise chefs, cooks, kitchen hands and stewards\nBuild a positive, productive kitchen culture where the team works well together\nStep onto the pass and sections when needed to prepare, cook and serve\nKeep across menu trends and contribute fresh ideas to keep QT's food distinctive\nRespond to guest feedback and resolve issues quickly\nLook after equipment and maintain a clean, safe and organised kitchen\nLearn the business side of the kitchen alongside the Executive Chef, including menu planning, budgets and supplier relationships, as you develop towards the top job\nWhat you'll bring\nProven experience as a Senior Sous Chef or Executive Sous Chef in a hotel or high-volume kitchen\nAmbition and readiness to step up to Executive Chef, with the leadership, commercial and culinary capability to back it up\nStrong culinary skills and a passion for quality, creativity and consistency\nExperience across breakfast, à la carte dining, bar food and in-room dining\nSound commercial skills, with confidence managing food cost, labour, ordering and budgets\nA confident, inspiring leadership style that builds and develops teams\nStrong knowledge of food safety, HACCP and WH&S requirements\nCalm under pressure, with strong organisation and communication skills\nHow You Work\nDaymaker ethos — no one’s too big for the small things. \nInclusive leader — values diverse perspectives; builds belonging. \nPerks from Day OneAs part of EVT, you unlock Elevate Perks from your first day.
