Maintain stock, supplies and cleanliness of bar and equipment.\nDUTIES AND RESPONSIBILITIES\nMaintain complete knowledge of and comply with all departmental policies/service procedures/standards.\nMaintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.\nMaintain positive guest relations at all times.\nResolve guest complaints, ensuring guest satisfaction.\nMonitor and maintain cleanliness, sanitation and organization of assigned work areas.\nMaintain complete knowledge of service requirements for assigned function:\nLiquor brands, beers and non-alcoholic beverages ordered.\nParticular characteristics/description of wines/champagnes ordered.\nPrices for specified bar selections.\nDesignated glassware, ingredients, preparation method and garnishes required.\nGroup name, type of function and expected attendance.\nScheduled hours of service.\nSpecial requests/arrangements.\nLocation of bar in function room.\nOrder of service.\nVIPs.\nMaintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.\nMaintain complete knowledge of the Point of Sale system and manual systems.\nObtain assigned bank and ensure accuracy of contracted monies. Keep bank secure at all times.\nComplete opening side duties:\nCheck quality and set up designated bar stock and supplies by using checklist.\nRequisition all necessary supplies.\nTransport supplies from storeroom to bar set-up area.\nStock ice.\nPrepare garnishes.\nStock glassware and paper supplies.\nPrepare mixes.\nCheck cleanliness and condition of bar. \nCheck condition and cleanliness of blender, shaker and other tools.\nGreet guests and take their orders, utilizing suggestive/up-selling techniques.\nInput orders into system; legibly document orders when system is down.\nEnsure that all cash bar drink orders from Servers are accurately rung into the Point of Sale system or collect drink tickets before giving drinks to them.\nPrepare all drink orders for guests according to specified recipes.\nProvide club service for designated beverages.\nServe drinks to guests.\nCollect drink tickets where specified.\nIssue, open and serve wine/champagne bottles; collect payment/tickets where specified.\nPrepare and serve cappuccino and espresso.\nRemove soiled wares from bar top and tables and place in designated area.\nAnticipate and communicate replenishment needs promptly, ensuring no shortages throughout scheduled function time.\nEnsure proper authorization for additional payments as required prior to replenishing.\nClearly communicate last call at designated closing time to guests and servers.\nPrepare consumption report promptly according to specified procedures.\nPresent guest check and process payment. Adhere to all cash handling and credit policies/procedures.\nLegibly complete bottle transfer slips and distribute accurately.\nLegibly document designated items on the spill sheet.\nEnsure maximum usage of all supplies to attain budgeted beverage cost and to prevent waste.\nUse all chemicals in accordance with OSHA regulations and hotel requirements.\nComplete closing side duties:\nWipes clean all surfaces of bar; clean all bar equipment and tools.\nWipe down all bottles and surfaces.\nSecure all liquors, beers, wines, coolers, cabinets and storage areas.\nRemove trash.\nComplete all closing reports in the Point of Sale system.\nCount bank at end of shift; complete designated cashier reports and drops receipts; secure bank.\nAbility to work a varied schedule that may include early morning, evening, night, and weekend shifts.\n\nPHYSICAL ABILITIES\nAbility to grasp, lift, move, or push goods on cart/truck weighing up to 100 pounds.\n Ability to move safely in uneven terrain or in confined spaces.\nAbility to see and respond dangerous to situations.\nRequires mobility. Sense of smell, taste, touch, and sound.
