El rol contribuye directamente a la optimización de costos, la inocuidad alimentaria y la excelencia gastronómica ofrecida a los clientes internos y externos.Su alcance esasegurarla calidad y disponibilidad de materias primas y la correcta ejecución de recetas, menús y especificaciones técnicas definidas para cada cliente. Asimismo, es responsable de ejecutar desarrollos gastronómicos y ajustes de menú, asegurando que estos cumplan con los lineamientos contractuales, los requisitos técnicos y las normativas de seguridad alimentaria.\nSupervisar y ejecutar la producción culinaria en su turno (por ejemplo: carnes, pescados, guarniciones, salsas, postres, etc.)\nAsegurar la correcta mise en place y mantener los niveles de inventario requeridos.\nGarantizar la presentación, sabor y temperatura adecuada de los platos antes del servicio.\nCumplir con los estándares de calidad, higiene y seguridad alimentaria (BPM, HACCP o equivalentes).\nCoordinar y apoyar al personal de cocina asignado a su estación.\nControlar los desperdicios y optimizar el uso de insumos para mantener la rentabilidad.\nParticipar en la creación y mejora de menús, sugerencias y platos especiales.\nMantener comunicación efectiva con el Sous Chef y demás partidas para un servicio coordinado.\nAsegurar el mantenimiento, limpieza y orden del área de trabajo, utensilios yequipos.\nSeguimiento, diseño y control de las propuestas y desarrollos para especificaciones técnicas de los requerimientos de los clientes.\nGarantizar la correcta información e implementación de las especificaciones técnicas que se generan contractualmente con cada cliente\nProgramar y realizar los respectivos cambios de ciclo de los diferentes clientes\nRealizar el chef table y controles organolépticos para los diferentes clientes.\nRealizar las pruebas organolépticas de todos los productos que se encuentran en proceso dentro del centro de producción.\nBrindar capacitaciones en temas gastronómicos a los líderes de producción.\nEmbark on a journey with us, where every day brings new opportunities for growth and success.
