This is a hands-on, floor-level leadership role.\nKey Responsibilities\nProduction Operations\nSupervise daily production of Indian sweets (ladoo, barfi, chikki, and similar formats) as per production schedule\nMonitor batch processing, cooking, moulding, cooling, and packing stages for quality adherence\nEnsure line efficiency targets (output per shift, wastage norms, downtime) are met consistently\nCoordinate with stores for timely raw material issuance and track consumption vs. standard BOM\nEnsure shift handover is documented and pending tasks are communicated clearly\nQuality & Food Safety\nEnforce GMP (Good Manufacturing Practices) and FSSAI hygiene standards across the production area\nConduct in-process quality checks (weight, texture, moisture, visual) and document results\nReport non-conformances to QA immediately and initiate corrective action\nEnsure all equipment, utensils, and work surfaces are sanitised as per SOP\nSupport internal and external food safety audits\nTeam Management\nManage a team of 15-25 production workers / helpers on shift\nAssign tasks, monitor attendance, and ensure optimal manpower utilisation\nTrain new joiners on SOPs, machine handling, hygiene protocols, and safety\nMaintain discipline and a positive work environment on the floor\nCoordinate with HR for attendance, overtime, and any IR concerns\nMachine & Equipment Oversight\nEnsure all production equipment (cookers, mixers, moulding machines, packaging lines) are operated correctly and per SOP\nIdentify and escalate maintenance issues proactively to the Engineering team\nMaintain equipment logs, cleaning records, and preventive maintenance checklists\nReporting & Documentation\nMaintain daily production reports, shift logs, wastage records, and batch records\nReport production vs. plan variance to Plant Manager with root cause and corrective action\nUpdate and maintain all required documentation for traceability and compliance\nCandidate Profile\nMust Have\n3-6 years of production floor experience in a food manufacturing unit (mithai / sweets / bakery / confectionery preferred)\nWorking knowledge of GMP, FSSAI food safety regulations, and HACCP basics\nAbility to read and implement production SOPs and batch records\nHands-on experience managing a team of 15+ workers\nWillingness to work rotational shifts including early mornings and weekends\nGood to Have\nExperience specifically in traditional Indian sweets / mithai production at commercial scale\nFamiliarity with ERP-based production tracking (SAP, Tally, or similar)\nBasic knowledge of Lean / 5S practices\nISO 22000 / FSMS awareness\nEducation\nDiploma / B.Sc. / B.Tech in Food Technology, Dairy Technology, or related field preferred\nITI / Diploma holders with strong relevant experience will also be considered\nLanguage\nKannada (mandatory for floor communication)\nHindi / English (for reporting and documentation)\nKey Competencies\nAttention to detail - especially around hygiene, weight accuracy, and visual quality\nOwnership mindset - treats the production line as their own responsibility\nPeople leadership - firm but respectful;
