Development & Quality Control:\n\nDevelop new recipes and refine the existing menu.\nSet up and maintain recipe cards and plating specifications.\nIntroduce and maintain portion and quality controls.\nTaste and sign off menu items before and during service.\nEnsure consistency in flavour, preparation and presentation.\n\nKitchen Operations & Training:\n\nManage food preparation and coordinate kitchen service in a high-volume environment.\nEnsure mise en place is complete before service.\nTrain kitchen staff on site in recipes, cooking methods, plating and portion control.\nAllocate daily tasks and monitor kitchen performance.\nCommunicate with front-of-house staff to ensure accurate orders and timely service.\nManage dietary requirements and food allergies carefully.\n\nFood Cost & Stock Control:\n\nControl food costs in the kitchen and work with management on menu costing.\nMonitor ingredient usage, wastage and stock losses.\nOversee ordering, receiving, storage and stock rotation.\nAssist with stocktakes and investigate food-cost variances.\n\nEquipment, Hygiene & Safety:\n\nInspect and maintain kitchen equipment, reporting faults and arranging specialist repairs where necessary.\nMaintain clean, organised workstations and storage areas.\nEnsure compliance with food hygiene and workplace safety standards.\n\nRequirements:\n\nProven Chef experience within a busy, high-volume restaurant.\nExperience with family restaurant or pub-style menus would be advantageous.\nAbility to manage kitchen operations independently during busy service periods.\nStrong recipe development, menu planning and plating skills.\nExperience creating recipe cards and implementing portion and quality controls.\nSound knowledge of food costing, menu costing and stock management.\nAbility to train, supervise and develop kitchen staff.\nGood knowledge of kitchen equipment care, food safety and hygiene.\nStrong organisational, communication and problem-solving skills.\nA reliable, disciplined approach and the ability to work under pressure.\nA relevant culinary qualification would be advantageous.\nWillingness to work evenings, weekends and public
