Executive Chef

• Formal qualification in Culinary Arts, Professional Cookery or an equivalent recognised culinary programme.
• Minimum of 5 years' experience in a senior culinary management role, preferably as an Executive Chef or Head Chef.
• Previous experience in a five-star hotel, luxury game lodge, safari lodge or fine-dining establishment is essential.
• Strong experience in fine dining, menu creation, modern cuisine and food presentation.
• Proven experience managing a kitchen brigade, including Sous Chefs, Chef de Parties, pastry chefs and kitchen assistants.
• Demonstrated knowledge of food costing, budgeting, purchasing, stocktaking and inventory control.
• Sound knowledge of HACCP principles, food safety and kitchen hygiene.
• Experience managing food production in a remote or live-in lodge environment would be advantageous.
• Knowledge of South African cuisine, seasonal ingredients and bush dining experiences.
• Computer literacy, including Microsoft Excel, Word and email; experience with stock-management or hospitality systems is advantageous.
• A valid driver's licence is preferable for a remote lodge environment.
• Contactable references from previous employers.
