The successful candidate will lead the culinary team, delivering exceptional dining experiences while maintaining the highest standards of food quality, hygiene, and operational efficiency.\nKey Responsibilities:\nExecute daily and seasonal menus in line with established SOPs\n\nAdapt menus based on guest feedback, dietary requirements, and stock availability\n\nPerform quality checks before each service to ensure consistent standards\n\nConduct accurate daily and monthly stock takes\n\nManage portion control to minimise wastage and optimise food costs\n\nCreate staff schedules and ensure smooth kitchen operations\n\nMaintain kitchen cleanliness and ensure compliance with all hygiene regulations\n\nOversee equipment maintenance and ensure readiness for service\n\nBrief and instruct junior staff effectively\n\nTrain kitchen team members on menu execution and hygiene standards\n\nMonitor staff performance and provide constructive feedback\n\nFoster teamwork, positive morale, and clear communication within the kitchen\n\nLead pre-shift briefings to coordinate front and back of house\n\nEnforce strict hygiene protocols and food safety standards (including HACCP)\n\nConduct daily checks on cleanliness, storage, temperature control, and pest management\n\nTrain staff on safe food handling, chemical use, and equipment safety\n\nEnsure proper use of PPE and maintain safe working conditions\n\nReport incidents or near-misses promptly and accurately\n\nEnsure compliance with all lodge health and safety policies and legal requirements\n\nSubmit weekly and monthly reports on stock, wastage, food costs, and maintenance to the General Manager\n\nCommunicate daily with Front of House teams regarding menus, dietary needs, and guest feedback\n\nKeep the General Manager informed on menu performance, staffing, and equipment issues\n\nMaintain clear internal communication through briefings, handovers, and prep lists\n\nEngage professionally with guests regarding menu items and special dietary requests\n\nStay up to date on best practices and innovations in food production and hygiene standards\n\nMonitor the condition of all kitchen machinery and report any maintenance needs promptly\n\nMinimum Requirements:\nFormal culinary qualification from a recognised institution\n\nMinimum of 5 years’ experience in a lodge, hotel, or fine-dining kitchen, with at least 2 years in a Head Chef role\n\nStrong knowledge of stock management, portion control, and food hygiene standards\n\nProven experience in preparing and presenting high-quality plated meals\n\nWillingness to live on-site and work in a remote bush environment\n\nProficiency in MS Office\n\nFluent in English (additional local languages advantageous)\n\nValid driver’s licence\n\nAbility to work flexible shifts and live on site\n\nWorking Conditions:\nLodge-based role with on-site accommodation provided\n\nShift work including weekends, public holidays, and
