This is a hands-on leadership role for a chef who thrives in a remote lodge setting and takes full ownership of the kitchen, from menu planning to team management. You'll be catering for a limited number of guests as well as staff meals, so consistency and attention to detail matter as much as creativity.

Core Criteria:

  • Proven experience as a Sous Chef or Head Chef in a luxury lodge or hotel environment
  • Strong menu development and food costing experience
  • Proven ability to manage budgets and maintain food cost percentages
  • Solid stock control, ordering, and kitchen administration skills
  • Strong leadership and staff management ability
  • Comfortable working and living in a remote bush environment
  • High standards of hygiene and food safety
Core Responsibilities:
  • Oversee all food preparation, presentation, and quality control
  • Develop and refresh menus in line with lodge standards and guest expectations
  • Manage kitchen budgets and monitor food cost percentages
  • Handle stock control, ordering, and stock takes
  • Maintain hygiene, health, and food safety standards throughout the kitchen
  • Recruit, train, and manage kitchen staff
  • Liaise with management on guest dietary requirements and special requests
  • Coordinate with front-of-house on service standards and timing
