Responsible for inventory of all china, glass, silver and serving equipment; cleaning of all Food & Beverage food prep and servicing areas, to include main kitchen, concessions kitchen and back hallways. Ensures equipment is cleaned, organized, and delivered for functions in a timely manner.\nRESPONSIBILITIES:\nMaintain complete knowledge of and comply with all departmental policies/service procedures/standards.\nMaintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended.\nMonitor and maintain cleanliness, sanitation and organization of assigned work areas.\nEnsure that all staff has reported for work.\nCoordinate breaks for assigned staff.\nCommunicate additions or changes to the assignment sheets as they arise throughout the shift.\nCheck and maintain supply levels in remote storage locations. Complete requisition for additional supplies needed to maintain par levels.\nInspect cleanliness and organization of storage areas. Assign designated personnel to rectify any deficiencies.\nCheck work stations for proper supplies, organization, cleanliness and mechanical problems. Instruct designated personnel to correct deficiencies.\nReview kitchen and front of house service needs from stewarding throughout the shift and ensure that all requirements are met according to specifications.\nCoordinate and assist with Banquet function requirements as assigned.\nReview equipment pull sheets and ensure equipment is collected, organized, and staged in a timely manner for each designated service.\nMonitor and maintain designated par levels of operating equipment.\nMonitor all work areas for compliance with State Health regulations; follow through on any violation.\nMonitor and ensure that all temperature and chemical solution requirements are met with regard to dishwashing, pot washing and storage.\nAssist Stewarding staff with their job functions where needed to ensure optimum cleanliness and service standards.\nComplete work orders for maintenance repairs and submit to management. Contact Engineering directly for urgent repairs.\nAccommodate requests for additional wares expediently and courteously. Follow up on delivery of all such items.\nProvide feedback on staff performance to manager.\nEnsure all staff assignments are completed before staff sign out.\nComplete all paperwork and closing duties before leaving.
