We’d love to hear from you.\nJob Purpose: Running weekend production at our Hackney Downs production kitchen. You’ll be responsible for the weekend’s orders, from wedding and celebration cakes to large corporate orders of Letterbox Brownies and orders from our e-commerce store, and for restocking the bakery after a busy week so the team is set up for Monday.\nWeekends run with a smaller team, so you’ll plan your own shift from the order list and handover notes, decide how to prioritise, and keep production moving. You’ll report to the Head Baker, who sets the orders and priorities before each weekend, and you’ll hand back to the weekday team with a clear handover at the end of each shift.\nKEY JOB RESPONSIBILITIES:\nIcing and decorating to a consistently high finish, including buttercream work, smooth coats, piping, lettering, and stacking and dowelling tiered cakes\nRestocking the bakery after the busy week: baking, portioning and storing core lines such as brownies, cookies, traybakes, sponges and pastry dough. \nMonitoring ingredient stock, and flagging shortages to the Head Baker ahead of the week\nWriting a clear end-of-shift handover covering what was baked, what is outstanding, and any issues with equipment, stock or orders\nSupporting the Head Baker and weekday team in meeting production deadlines, and helping at the Luminary Bakery Cafe (N16) when needed. \nEnsuring that every product that leaves the bakery is to the highest quality and standard\nMaintaining food hygiene and safety standards as per company policy, including allergen labelling, temperature records and cleaning schedules\nLeaving the kitchen clean, organised and ready for the weekday team at the end of each shift \nREQUIREMENTS NECESSARY:\nHave minimum 2 years of experience in a professional bakery\nConfident cake decorating skills, with experience finishing celebration cakes to a professional standard\nComfortable working independently and using your own judgement to prioritise and solve problems when there is no manager on site\nAble to follow recipes, order specifications and production plans accurately\nAbility to bake high quality products that are uniform and consistent\nMotivated and hard-working, able to work in a fast-paced environment\nOrganised, with the ability to manage multiple priorities and work to deadlines\nCollaborative and hardworking\nAbility to handle and lift items weighing between 0-50 pounds\nProof of eligibility to work in the UK\nReliably available every Saturday and Sunday\nDESIRABLE:\nWillingness to work varied hours or days based on business needs\nExperience making and decorating wedding or tiered cakes\nLevel 2 Food Hygiene certificate (or
