Designed to be a sanctuary in the heart of the city, the hotel promises an elevated experience for both leisure and business travelers seeking comfort, excellence, and distinction in Manila.\nThe Role\nThe Commis - Chinese Kitchen is responsible for assisting in the preparation, cooking, and presentation of authentic Chinese cuisine while maintaining the highest standards of food quality, hygiene, and kitchen safety. The role supports the efficient operation of the Chinese Kitchen by ensuring ingredients are properly prepared, cooking stations are maintained, and dishes are produced consistently according to established recipes and standards.\nKey Responsibilities\nAssist in the preparation and cooking of Chinese dishes in accordance with established recipes, portion controls, and presentation standards.\nPrepare ingredients including vegetables, meats, seafood, sauces, and condiments required for daily operations.\nEnsure all food items are stored, handled, and labeled properly following food safety and hygiene standards.\nMaintain cleanliness and organization of workstations, equipment, and kitchen areas at all times.\nSupport senior chefs in mise en place preparation and daily kitchen operations.\nMonitor stock levels and promptly report shortages or quality concerns to the Chef de Partie or Sous Chef.\nEnsure proper use, care, and maintenance of kitchen equipment and utensils.\nFollow all safety, sanitation, and hotel policies and procedures.\nAssist in receiving and inspecting deliveries to ensure product quality and freshness.\nMinimize wastage and contribute to cost-control initiatives.\nParticipate in training sessions and continuously develop culinary knowledge and skills in Chinese cuisine.\nSupport colleagues and other kitchen sections as required to ensure smooth operations and exceptional guest satisfaction.\nQualifications & Experience\nGraduate of Culinary Arts, Hospitality Management, or a related field is preferred.\nVocational or technical culinary certification is an advantage.\nMinimum 1 year of culinary experience in a Chinese restaurant, hotel, or similar food service establishment preferred.\nFresh graduates with culinary training may be considered for entry-level positions.\nBasic knowledge of Chinese cooking techniques, ingredients, and food preparation methods.\nUnderstanding of food safety, sanitation, and HACCP principles.\nAbility to work efficiently in a fast-paced kitchen environment.\nGood organizational skills and attention to detail.\nStrong teamwork and communication skills.\nAbility to follow instructions and maintain high-quality standards.\nWillingness to work flexible shifts, including weekends and public holidays.\nWhy Join Us?\nMandarin Oriental offers a world-class environment where your expertise, creativity, and leadership will shape the legacy of our return to Manila.
