The role provides guidance and support to F&B colleagues, ensures consistent delivery of exceptional guest service, and maintains the highest standards of food, beverage, hygiene, and service in accordance with the hotel's luxury standards.\nAs F&B Captain you will be responsible for the following duties:\nGuest Service\nWelcome and engage with guests in a warm, professional, and personalized manner.\nEnsure guests receive attentive, efficient, and seamless service throughout their dining experience.\nTake food and beverage orders accurately and provide recommendations based on guest preferences.\nDemonstrate thorough knowledge of menus, ingredients, preparation methods, beverages, and current promotions.\nAnticipate guest needs and proactively respond to requests.\nHandle guest feedback and complaints professionally and escalate matters to the Outlet Manager when necessary.\nEnsure all special requests, dietary requirements, allergies, and guest preferences are communicated accurately to the relevant team members.\nConduct regular table checks to ensure guest satisfaction throughout the meal.\nSection & Service Management\nTake responsibility for the smooth operation of the assigned section during the shift.\nEnsure tables are properly set and maintained according to outlet standards.\nCoordinate the timing of food and beverage service with the Kitchen and Bar.\nEnsure orders are served accurately, promptly, and according to established standards.\nMonitor table status and coordinate with the service team to maintain efficient table turnover.\nConduct quality checks on food and beverages before they are presented to guests.\nEnsure clearing, resetting, and mise en place are completed efficiently.\nAssist with opening and closing procedures according to departmental SOPs.\nTeam Supervision & Leadership\nGuide, coach, and support F&B colleagues in delivering consistent service standards.\nAllocate tasks and assist in coordinating the team during the shift.\nProvide on-the-job training and share product and service knowledge with junior colleagues.\nMonitor colleagues' adherence to service standards, grooming, hygiene, and departmental SOPs.\nLead by example and promote a positive and professional working environment.\nCommunicate operational updates, guest preferences, and special requirements during briefings.\nAssist the Outlet Manager with daily operational matters when required.\nGuest Experience & Brand Standards\nDeliver service in accordance with Mandarin Oriental's luxury service standards and the hotel's service philosophy.\nRecognize VIPs, repeat guests, and special occasions and ensure appropriate service arrangements are made.\nCreate personalized and memorable experiences through attentive and thoughtful service.\nMaintain a strong knowledge of the hotel's facilities, outlets, activities, and services to assist guests with enquiries.\nSupport the outlet in achieving guest satisfaction and service quality targets.\nHygiene, Safety & Compliance\nEnsure compliance with food safety, hygiene, HACCP, and health and safety requirements.\nMaintain high standards of cleanliness and organization within the assigned section and service areas.\nEnsure proper handling and storage of food and beverage products.\nReport any hygiene, safety, maintenance, or equipment issues to the supervisor promptly.\nEnsure all departmental policies and SOPs are consistently followed.\nStock & Cost Control\nMonitor the availability and proper use of operating supplies, tableware, and equipment.\nMinimize wastage and ensure appropriate portion control and product handling.\nAssist with stocktaking and inventory checks when required.\nReport shortages, breakages, or discrepancies to the supervisor.\nSupport the outlet in achieving departmental cost-control objectives.\nAs F&B Captain,we expect from you:\nEducational Background\nMinimum 2-3 years of experience in Food & Beverage, preferably within a luxury hotel, resort, or high-end restaurant.\nPrevious experience as an F&B Captain, Senior Waiter/Waitress, or equivalent supervisory role is preferred.\nDiploma or certificate in Hospitality, Food & Beverage, or a related field is an advantage.\nSkills\nStrong knowledge of restaurant service, food and beverage products, and service standards.\nGood command of English; additional languages are an advantage.\nExcellent communication and interpersonal skills.\nStrong guest-service orientation with a passion for hospitality.\nConfident in guiding and coaching junior colleagues.\nAble to work effectively under pressure in a fast-paced environment.\nWilling to work shifts, weekends, public holidays, and according to operational requirements.\nOur commitment to you\nLearning & Development.
