The role supports inventory management, purchasing controls, recipe costing, stock reconciliations, and financial reporting to maintain effective cost management across all departments.\nKey Responsibilities\nCost Control & Analysis\nMonitor daily, weekly, and monthly food, beverage, and operating costs.\nAnalyze cost variances and identify opportunities for cost savings and efficiency improvements.\nPrepare cost analysis reports and provide recommendations to management.\nReview departmental expenses to ensure they remain within approved budgets.\nMonitor menu profitability and pricing structures.\nInventory Management\nConduct and supervise month-end inventory counts for food, beverage, operating supplies, and retail items.\nReconcile physical stock counts against system balances and investigate variances.\nEnsure inventory records are accurate and maintained in a timely manner.\nMonitor stock movement, slow-moving items, and potential wastage.\nSupport departments with inventory control procedures and best practices.\nPurchasing & Receiving Controls\nReview purchase orders and receiving documentation for accuracy and compliance.\nEnsure purchases are approved and supported by proper documentation.\nVerify supplier pricing and investigate unusual cost increases.\nCoordinate with Purchasing and Receiving teams to ensure adherence to procurement policies.\nMonitor contract pricing and supplier agreements.\nMenu Engineering & Recipe Costing\nPrepare and maintain recipe costing for all food and beverage outlets.\nUpdate menu costings for changes in supplier pricing and ingredients.\nConduct menu engineering analysis and provide recommendations to improve profitability.\nWork closely with the Executive Chef and F&B management on cost optimization.\nReporting & Financial Analysis\nPrepare monthly food and beverage cost reports.\nAnalyze consumption trends and highlight significant fluctuations.\nAssist in budget preparation and forecasting processes.\nPrepare month-end reconciliation schedules and supporting documentation.\nSupport management with financial information for decision-making.\nReport accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications. Follow all company policies and procedures; ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets. Speak with others using clear and professional language; prepare and review written documents accurately and completely; answer telephones using appropriate etiquette. Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees. Comply with quality assurance expectations and standards. Read and visually verify information in a variety of formats (e.g., small print). Visually inspect tools, equipment, or machines (e.g., to identify defects). Enter and locate work-related information using computers and/or point of sale systems. Stand, sit, or walk for an extended period of time or for an entire work shift. Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance. Move through narrow, confined, or elevated spaces. Move over sloping, uneven, or slippery surfaces. Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
