Continued employment is contingent on the renewal of grant or restricted funding.\nThe salary is determined in accordance with the University’s compensation structure and will be commensurate with the candidates’ education and experience, within the assigned salary range for this position.\nResponsibilities:\nAssist in maintaining HACCP, SOPs and food safety records. Assist with demonstrations in labs for teaching, research and extension programs.\n\nMaintain equipment and facilities. Distribute all meat items (packaging, storing, shipping, etc.).\n\nFabricate carcasses into roasts, chops, steaks and other standard cuts. Process carcasses from slaughter to cooler. Make sausages, ground meats, cutlets, value-added products and cured and smoked products.\n\nAssist with demonstrations in labs for teaching, research and extension programs.\n\nPerforms other duties as assigned.\n\nRequired Education and Experience:\nHigh School diploma or equivalent combination of education and experience.\n\nFive years of related experience in the meat industry.\n\nRequired Knowledge, Skills, and Abilities:\nKnowledge of Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS) procedures.\n\nAbility to multitask and work cooperatively with others.\n\nAbility to harvest and process beef, lamb, and pork.\n\nPreferred Qualifications:\nBachelor’s degree in Animal or Food Science or closely related field\n\nSix years of related experience in the meat industry\n\nPrevious university meat production facility experience or meats judging experience is a plus\n\nJob Posting Close Date:\nOpen Until Filled\n\nRequired Attachments:\nPlease attach all required documents listed below in the attachment box labeled as either “Resume/CV or Resume/Cover Letter” on the application.
