join our culinary team on a permanent part-time basis.\nReporting to the Chef de Cuisine, you'll play a key role in producing high-quality pastries, desserts and baked goods across our restaurants, events and conferencing operations, while enjoying one of Victoria's most spectacular coastal locations.\nAbout the Opportunity\nAs a Pastry Chef de Partie, you'll support the day-to-day operation of the pastry section and help deliver exceptional dining experiences for our members and guests.\nIn this role, you will:\nPrepare and present high-quality desserts, plated desserts, pastries, cakes, baked goods, and buffet offerings across multiple food outlets.\n\nSupport the daily operation of the Pastry Kitchen, ensuring efficient service delivery across breakfast, lunch, dinner, conferencing, and event periods.\n\nComplete all mise en place requirements and maintain service readiness for restaurant, conference, banquet, and event operations.\n\nProduce pastries, cakes, desserts, and baked products to a consistently high standard, following approved recipes and presentation guidelines.\n\nPrepare, finish, and present pastry and dessert items with exceptional attention to quality, creativity, and presentation.\n\nCreate and prepare customized VIP guest amenities and special occasion desserts.\n\nAssist with pastry production requirements for conferences, weddings, functions, and other special events.\n\nSupport effective stock management practices, including ordering, stock rotation, inventory control, and waste minimization.\n\nAssist in the training, mentoring, and development of apprentices, cooks, and junior chefs.\n\nMaintain and uphold the highest standards of food safety, hygiene, sanitation, and workplace health and safety.\n\nWork collaboratively with the broader Kitchen Brigade and Food & Beverage team to deliver exceptional guest experiences.\n\nContribute positively to team culture, operational excellence, and continuous improvement initiatives within the kitchen.\n\nWhat you’ll need to be successful\nYou're a qualified pastry chef who takes pride in producing quality desserts and enjoys working in a fast-paced hospitality environment.\nYou'll bring:\nCertificate III in Patisserie or completion of a pastry apprenticeship\n\nPrevious experience in a pastry kitchen within a hotel, resort, bakery, patisserie or hospitality venue\n\nExperience producing pastries, cakes and desserts in a commercial kitchen environment\n\nExperience finishing cakes and desserts and preparing plated desserts to a consistent standard\n\nGood knowledge of pastry techniques, baking methods and dessert presentation\n\nA sound understanding of food safety, hygiene and stock control practices\n\nThe ability to remain calm under pressure and work effectively as part of a team\n\nA positive attitude, strong work ethic and willingness to learn\n\nFlexibility to work a rotating roster, including weekends, public holidays and peak trading
