You maintain a visible presence during busy service, set clear expectations, and follow through. You know how to balance labor, inventory, and operating costs while building a team that takes pride in its work.\nYou’re comfortable coaching managers, addressing concerns directly, and partnering with your Regional Manager and Human Resources. You make sound decisions under pressure, communicate proactively, and recognize that a successful restaurant starts with consistent leadership.\nIf you’re ready to lead a restaurant, develop future leaders, and grow your career with a pathway toward restaurant ownership, we’d love to meet you.\nWhat You’ll Do\nLead daily restaurant operations across the front and back of house, including opening, closing, and management coverage.\nMaintain a visible leadership presence during peak business periods and support the team throughout service.\nEnsure food quality, presentation, portioning, and ticket times meet Trapper’s standards.\nAddress guest concerns promptly and professionally, identifying recurring issues and following through on improvements.\nBuild, train, and retain a strong team of hourly team members and managers.\nPartner with Human Resources on recruiting, interviewing, hiring, and onboarding.\nEnsure team members complete required training and maintain current certifications and permits.\nDevelop Assistant General Managers, Kitchen Managers, and shift leaders through coaching, delegation, and timely feedback.\nConduct performance reviews and address performance or conduct concerns in partnership with Human Resources.\nCreate a respectful workplace and promptly route employee complaints, accommodation requests, and other sensitive concerns to Human Resources.\nManage scheduling, labor, and overtime to align with sales volume and approved operating plans.\nOversee ordering, inventory, portion control, product rotation, and waste reduction.\nReview financial results with the Regional Manager, identify opportunities, and follow through on corrective actions.\nOversee cash handling, deposits, reconciliation, and authorized discounts, comps, and voids.\nMaintain restaurant cleanliness, sanitation, equipment, and facility standards.\nEnsure accurate timekeeping, proper recording of all hours worked, and adherence to company meal and rest break procedures.\nReport workplace injuries and safety incidents immediately and complete required documentation.\nExecute company promotions, menu changes, and operational initiatives.\nProtect confidential employee, payroll, and financial information.\nComplete reports, checklists, and administrative responsibilities accurately and on time.\nUphold Trapper’s Sushi’s TRAPCHK core values: Teamwork, Respect, Accountability, Passion, Communication, Honesty, and Kindness.\nPerform other related duties and support business needs as assigned.\nWhat’s In It for You\nCompensation: $34.60-$38.00 per hour, based on experience and qualifications. As a management position, the General Manager does not participate in tips but does qualify for our Bonus Program\nEligible for the Semiannual General Manager Bonus Program, subject to plan terms, eligibility, and performance requirements. Bonus payments are not guaranteed.\nMedical insurance: coverage begins the first of the month following two consecutive months of full-time employment. Trapper’s covers 80% of the premium for employee-only coverage on the PPO 1000 plan.\nPaid vacation starting at two weeks per year and increasing with tenure up to four weeks, per company policy.\nDailyPay access, allowing eligible employees to access earned wages before payday.\n401(k) retirement plan eligibility after one year of continuous employment, subject to plan terms.\nVoluntary dental and vision coverage.\nEmployee Assistance Program (EAP).\nPaid sick leave in accordance with Washington state and local laws.\nA complimentary meal while on shift, plus a 25% dining discount off duty that extends to your immediate family.\nFood Protection Manager certification provided and paid for by Trapper’s.\nLeadership development and advancement opportunities.\nA pathway to become a Managing Partner and pursue restaurant ownership through our ownership program.\nA supportive, collaborative, and people-first culture where your contributions matter.\nWhat You Bring\nThree or more years of restaurant management experience, including profit and loss responsibility, or equivalent internal progression through Trapper’s Sushi leadership roles.\nDemonstrated ability to lead, train, develop, and retain restaurant team members and managers.\nExperience overseeing both front-of-house and back-of-house operations.\nWorking knowledge of scheduling, labor management, inventory, food costs, and financial performance.\nAbility to stay organized, prioritize competing needs, and make sound decisions during busy service.\nClear, professional communication with team members, guests, vendors, leadership, and Human Resources.\nA consistent approach to accountability, coaching, and follow-through.\nProficiency with point-of-sale, scheduling, timekeeping, and workforce systems; Toast and 7shifts experience is a plus.\nAbility to obtain and maintain required Washington food worker and alcohol service credentials.\nFood Protection Manager certification preferred; must be obtained after hire if not already held.\nAvailability to work a flexible schedule, including evenings, weekends, and holidays.\nWillingness to travel occasionally for meetings, training, or operational support as assigned.\nRequirements\nThe Physical Stuff\nRestaurant-based position in a fast-paced, high-volume environment.\nAbility to stand and walk for extended periods and move throughout the restaurant.\nAbility to regularly bend, reach, stoop, kneel, push, and pull.\nAbility to lift and carry up to 25 pounds frequently and up to 50 pounds occasionally, with or without assistance.\nExposure to hot surfaces, sharp equipment, cleaning chemicals, wet floors, walk-in coolers and freezers, and moderate-to-high noise levels.\nAbility to manage frequent interruptions while remaining attentive to guests, team members, and restaurant operations.\nUse of required PPE, including non-slip footwear.\nAbility to perform the essential functions of the position, with or without reasonable accommodation.\nCompliance and Equal Opportunity\nThis position is classified as non-exempt under the Fair Labor Standards Act and applicable state law and is eligible for overtime compensation in accordance with applicable federal and state laws.
