As Executive Chef, you will be responsible for overseeing all culinary operations, ensuring exceptional guest experiences, maintaining the highest food quality and hygiene standards, and leading a high-performing kitchen team.

Key Responsibilities

Leadership & Operations

  • Lead and manage all kitchen operations, ensuring the highest standards of food quality, presentation, and consistency.
  • Foster a positive, motivated, and professional work environment.
  • Coordinate effectively with Food & Beverage, Stewarding, Engineering, and other departments to ensure seamless operations.
  • Conduct daily briefings and departmental meetings to ensure effective communication and operational efficiency.
  • Ensure kitchen readiness and efficient response to last-minute operational changes.
  • Oversee preventive maintenance and proper utilization of all kitchen equipment.

Quality & Productivity

  • Drive continuous improvement through Aman’s quality management initiatives.
  • Ensure all food products are ordered, received, stored, and prepared according to the highest quality and hygiene standards.
  • Monitor industry trends, culinary innovations, and competitor activities.
  • Optimize manpower scheduling to maximize productivity while managing labor costs effectively.
  • Implement and maintain operational standards, procedures, and best practices.

People Management

  • Recruit, develop, coach, and retain talented culinary professionals.
  • Build a culture of teamwork, accountability, and continuous learning.
  • Conduct training, performance evaluations, and career development discussions.
  • Promote employee engagement, welfare, and professional growth.
  • Collaborate closely with the Human Resources team on staffing, succession planning, and talent development initiatives.

Financial & Cost Control

  • Prepare and manage departmental budgets and capital expenditure plans.
  • Monitor food costs, consumables, and operational expenses to achieve financial targets.
  • Participate in monthly Profit & Loss reviews and develop cost-saving initiatives.
  • Ensure accurate inventory control, stock management, and purchasing practices.
  • Work closely with suppliers and the Purchasing Department to secure high-quality products at competitive prices.

Food Safety & Hygiene

  • Champion a culture of food safety, sanitation, and HACCP compliance throughout the operation.
  • Ensure strict adherence to all health, safety, and hygiene regulations.
  • Develop and monitor cleaning schedules, sanitation procedures, and food safety systems.
  • Lead hygiene awareness training programs for all culinary team members.
  • Maintain the highest standards of cleanliness across kitchens, storage areas, and back-of-house facilities.

Qualifications & Experience

  • Proven experience as an Executive Chef or Senior Kitchen Leader in a luxury hospitality environment.
  • Strong knowledge of international cuisine, food production, and culinary trends.
  • Excellent leadership, communication, and team development skills.
  • Sound financial acumen with experience in budgeting, cost control, and inventory management.
  • Comprehensive knowledge of HACCP, food safety regulations, and hygiene standards.
  • Ability to perform effectively in a fast-paced luxury hospitality environment.
  • Professional culinary qualifications will be an added advantage.
