Once you’re in, there’s no limits on where your career could take you.  The opportunityQT Canberra is looking for an Executive Sous Chef to work alongside our Executive Chef as second-in-command, leading the day-to-day running of our kitchen. You'll keep culinary standards high across breakfast, dinner, the bar and in-room dining, mentor and grow a talented brigade, and help drive the food and labour results that keep QT ahead.

Key responsibilities

Work closely with the Executive Chef to lead the day-to-day running of the kitchen across breakfast, dinner, bar and in-room dining

Approve all food leaving the kitchen, ensuring standard recipes and production specifications are followed

Ensure every section and team member is rostered, prepped and ready for service

Partner with the Food & Beverage Manager and outlet supervisors for smooth service across all outlets

Manage food and labour costs to budget through smart ordering, par levels, stock rotation and waste reduction

Check the quality and accuracy of daily deliveries

Maintain the highest food safety, hygiene and WH&S standards

Recruit, train, coach and supervise chefs, cooks, kitchen hands and stewards

Build a positive, productive kitchen culture where the team works well together

Step onto the pass and sections when needed to prepare, cook and serve

Keep across menu trends and contribute fresh ideas to keep QT's food distinctive

Respond to guest feedback and resolve issues quickly

Look after equipment and maintain a clean, safe and organised kitchen

Learn the business side of the kitchen alongside the Executive Chef, including menu planning, budgets and supplier relationships, as you develop towards the top job

What you'll bring

Proven experience as a Senior Sous Chef or Executive Sous Chef in a hotel or high-volume kitchen

Ambition and readiness to step up to Executive Chef, with the leadership, commercial and culinary capability to back it up

Strong culinary skills and a passion for quality, creativity and consistency

Experience across breakfast, à la carte dining, bar food and in-room dining

Sound commercial skills, with confidence managing food cost, labour, ordering and budgets

A confident, inspiring leadership style that builds and develops teams

Strong knowledge of food safety, HACCP and WH&S requirements

Calm under pressure, with strong organisation and communication skills
