• Manage daily kitchen operations, food preparation, portion control, presentation and service standards.
• Oversee stocktakes, purchasing, deliveries, inventory control and stock variances.
• Monitor food costs, maintain menu costing sheets and minimise wastage.
• Supervise kitchen staff, prepare duty rosters, manage attendance and facilitate staff training.
• Coordinate with front-of-house management regarding functions, group bookings and dietary requirements.
• Ensure compliance with food safety, hygiene and kitchen cleanliness standards.

• Formal culinary qualification or equivalent professional chef experience.
• Minimum 2 years' experience in kitchen management, as a Head Chef or in a supervisory role.
• Proven experience managing kitchen teams in a busy restaurant environment.
• Sound knowledge of stock control, purchasing, food costing and staff scheduling.
• Good understanding of food safety and hygiene procedures.
• Computer literacy in MS Excel, Word and other Microsoft Office applications.
• Experience with Cimso Innkeeper stock control and inventory functions will be advantageous.
