Outlet Manager

About the Role

Veranda Tamarin is looking for a dynamic and hands-on Outlet Manager to oversee our F&B outlet operations and ensure the highest standards of service, quality and guest satisfaction.

The Outlet Manager will provide leadership, supervision and motivation to the outlet team while ensuring smooth daily operations in line with hotel standards, quality requirements and business objectives.

• Lead, supervise and motivate the outlet team to deliver consistent service excellence.
• Organise and supervise daily breakfast, lunch and dinner operations.
• Ensure smooth coordination between F&B Service, Kitchen, Housekeeping and other departments.
• Ensure the outlet is properly staffed and effectively managed during each shift.
• Conduct daily briefings and debriefings and ensure effective shift handovers.
• Ensure team members receive appropriate on-the-job training and support their professional development.
• Monitor team discipline, grooming, attendance, leave and overall performance.
• Support performance appraisals and identify training and development needs.
• Maintain strong employee relations and contribute to team welfare and engagement.
• Ensure high standards of guest care and service at all times.
• Handle guest complaints professionally and ensure appropriate follow-up.
• Inspect outlet set-ups, service stations and overall ambience before service.
• Ensure guest requests and special arrangements are properly followed.
• Review daily events and coordinate requirements for guest arrivals, special cocktails, fruit platters and other occasions.
• Participate actively in food and beverage service whenever required.
• Develop and implement innovative ideas such as special dinners, themed evenings and other guest experiences.
• Monitor the quality of food, beverages and services delivered to guests.
• Supervise room service orders and liaise closely with the Kitchen team.
• Ensure all guest checks and transactions are handled correctly.
• Monitor outlet expenses, breakages, linen and material usage.
• Maintain appropriate par stocks and approve store requisitions.
• Conduct monthly inventory of materials used within the outlet and villas.
• Monitor outlet equipment in collaboration with the Stewarding team.
• Assist in managing the outlet budget efficiently and effectively.
• Submit daily covers and sales figures to the F&B Manager / Night Auditor.
• Ensure compliance with the hotel's Quality Management System.
• Ensure compliance with Safety & Health regulations and policies.
• Implement and follow established quality procedures.
• Promote energy and resource conservation, including electricity, gas and water.
• Contribute to the hotel's sustainability and environmental commitments.
• Report any matters that may impact the environment or society to the relevant department.
• Keep management informed of operational issues and matters concerning team members.

Qualifications

• SC / HSC or equivalent, combined with relevant professional training and experience.
• Diploma specialising in Food & Beverage from a recognised institution would be an advantage.

Experience

• Minimum 6 years' experience in F&B operations.
• At least 2 years' experience as an Outlet Supervisor in a hotel or restaurant environment.
• Previous experience in a similar managerial/supervisory F&B role is preferred.

• Creative mindset with the ability to introduce new F&B concepts and guest experiences.
• Computer literate, with knowledge of hotel systems such as Opera, Micros and WINHMS considered an advantage.
• Fluent in English and French, both written and spoken.
• Knowledge of a third language would be an advantage.
• Strong commitment to quality, safety, sustainability and service excellence.
