- Western Cape An established wine estate in Paarl is seeking a skilled and passionate Chef de Cuisine to lead daily kitchen operations. This role is ideal for a hands-on culinary professional who takes pride in excellent food, consistent standards and memorable guest experiences. The successful candidate will work closely with the broader hospitality team while guiding, developing and motivating the kitchen brigade. Job Description & Requirements: Lead the daily preparation and service of high-quality dishes. Maintain consistent presentation, flavour, portioning and quality across all menu items. Support menu planning and seasonal menu development in keeping with the estate’s offering. Supervise; motivate and train kitchen team members to deliver consistently professional results. Allocate daily duties and ensure the kitchen is adequately prepared for each service. Manage food production, preparation schedules and service flow. Monitor stock levels, ordering, receiving, storage and rotation of ingredients. Assist with food cost control, portion management and the reduction of unnecessary waste. Ensure all kitchen areas, equipment and storage facilities are clean, organised and well maintained. Uphold food safety, hygiene and health and safety standards. Conduct regular quality checks and address operational concerns promptly. Work closely with front-of-house colleagues to ensure smooth communication and efficient guest service. Assist with functions, events, tastings and special dining experiences hosted by the wine estate. Demonstrate strong culinary knowledge and sound kitchen leadership ability. Previous experience in a senior chef position within a quality hospitality environment is essential. Wine estate, restaurant, hotel or function catering experience will be advantageous. A relevant culinary qualification will be advantageous. Strong organisational, communication and team management skills are required. The ability to remain calm, organised and solutions-focused during busy services is important. Candidates should be creative, reliable and committed to maintaining high standards. A flexible approach to working hospitality hours, including weekends and public holidays, is required. Package Salary: R18 000
