We are looking for a hands-on chef with proven head chef experience, who can coach a kitchen team while keeping food quality, costs, and hygiene standards firmly in check in a remote lodge environment.
Core Criteria:
- Minimum of 3 years’ experience in a Head Chef position
- Certificate or Diploma in Culinary Arts and/or Hospitality Management
- Excellent culinary skills and sound knowledge of food preparation methods
- Experience preparing vegetarian and special dietary meals
- Strong leadership, coaching, and training abilities
- Knowledge of health and safety regulations
- Computer literate
- Good interpersonal and communication skills
- Ability to work well within a team
- Valid Food Handling Certificate and First Aid Certificate (advantageous)
- Lead and supervise all kitchen operations and food preparation
- Ensure meals are prepared to set recipes and company standards
- Maintain exceptional food quality, presentation, and service
- Monitor portion control and food costs to keep waste to a minimum
- Train and mentor kitchen staff in preparation techniques and the company food philosophy
- Ensure compliance with food safety, hygiene, and health and safety regulations
- Conduct regular hygiene audits and keep kitchens, fridges, and storerooms clean and organised
- Assist with stock control, stock takes, and food ordering
- Work closely with the Food and Beverage team to continually improve the guest dining experience
